4 tbsp Tomato Purée
1 tsp Chopped Ginger
1 tsp Chopped Garlic
100 ml Water
Handful of Chopped Pineapple
(tinned or frozen)
50 ml Mango Juice
1 tsp Apple Cider Vinegar
1 tbsp Cornflour
1 Chicken Breast
1/2 Onion
1/2 Pepper


- Blend the mango juice, apple cider vinegar, pineapple, tomato purée, ginger, garlic and water

- Put into a sauce pan and heat gently

- Mix the cornflour with a drop of cold water and add to the pan to thicken the sauce

- Fry off the chicken in a pan, once browned add the onion and pepper

- Once cooked through and softened add the sauce

- Serve with rice
