Dairy & Egg Free


75ml Oil
100ml Milk or Alternative
125g Self Raising Flour
1 tsp Baking Powder
1 Egg (or 1tbsp White Vinegar & 1tsp Baking Soda)
Dash of Vanilla Extract
3 tbsp Sweet Freedom Fruit Syrup (or Honey if over 1)
Handful of Fruit (fresh or frozen- Blueberry, Strawberry, Apple or Cherry works well)
60g Porridge Oats
1 tbsp Dairy Free Spread
50g Plain Flour


- In a bowl mix together the oil, milk, vanilla, 2 tbsp syrup, baking powder and egg (or substitute)

- Slowmix in the self raising flour to form a smooth batter

- Chop up any larger fruit and gently fold through the batter leaving 1/4 aside

- For the crumble topping rub together the butter, oats, 1 tbsp syrup and plain flour to form a crumble

- Place the batter into a lines muffin tin, top with some fruit and crumble and press into the batter

- Bake at 180 for 15-20 mins

Keep in an airtight container for 2 days
